What happens when a top bartender works with a timeless ingredient? You get Sister Aestas, a cocktail with real character and craftsmanship behind it.
Created by Gracie Goggins, recognised not only as a 2024 UK Top 50 Rising Star nominee but also as ‘Emerging Bartender of the Year’ at this year's @classbarmag awards. This serve brings together technique, balance, and a quietly luxurious flavour profile. Developed as Gracie’s entry for the NC Neans whiskey competition, Sister Aestas places Noffee at the heart of the recipe, pairing chicory coffee with a modern interpretation of an ancient Roman concept.
The result is a cocktail that feels thoughtful, elegant, and genuinely different, the kind of drink you remember long after the glass is empty.

Why Chicory Coffee Works So Well in This Cocktail
Chicory coffee has a naturally smooth warmth that works beautifully with whisky. Its gentle caramel notes, soft roasted depth, and subtle sweetness make it a natural partner for a spirit with complexity. Instead of adding bitterness, it rounds the drink, giving Sister Aestas a richness that feels deliberate rather than heavy.
Noffee’s flavour profile also brings a sense of calm indulgence, the kind you associate with slow, considered sipping. It is this balance that allows the whisky to shine while adding a foundation that ties every element together.

The Sister Aestas Recipe
A refined cocktail you can recreate at home
Ingredients
- 60ml Nc’nean Organic Single Malt Whisky
- 130ml Noffee (chicory coffee)
- 15ml 2:1 sugar-infused syrup
- Chicory cream (room temperature)
-
Frangelico (for an aromatic spray)
Method
-
Add the whisky, Noffee, and sugar syrup to a glass and stir gently.
-
Ensure your chicory cream is at room temperature and has been shaken or stirred to aerate it, this helps it float cleanly.
-
Carefully layer the chicory cream on top of the drink.
-
Finish with a fine spray of Frangelico across the surface to create a warm, nutty aroma.
-
Serve and enjoy; it is the kind of cocktail that invites you to slow down.
